How come my dobes right ear flops a few hours after taking the Racks down?

Have you asked your vet? My family had a dobie many years ago and never got his ears cropped because the vet said they wouldn't stand up if they were done, so we left them long (he ended up looking like a huge black and tan hound dog...LOL!)
